Flourless Peanutbutter Chocolate Chip cookies

This recipe came from Southern Living Dec. 2010

1 C creamy peanutbutter
3/4 C sugar
1 large egg
1/2 tsp baking soda
1/4 tsp salt
1 C semisweet chocolate chips

Parchment paper

Heat oven to 350

Mix the first 5 ingredients in medium bowl until well blended. Stir in chocolate chips.
Drop dough by rounded Tbs 2 in. apart onto parchment paper lined baking sheets.

Bake at 350 for 12-14 minutes or until puffed and lightly browned. Cool on baking sheets on wire rack for 5 minutes. Transfer to wire rack and let cool for 15 minutes.
 
Thanks GG. Sounds devine. Instead of egg, I will use 1/4 cup of dairy kefir or a banana. I don't eat eggs anymore as I used to have chickens and they gross me out, lol. Instead of the chocolate chips, I'll make homemade carob chunks from cocoa. I am currently on a break from sugar as my teeth have been bothering me, so I'll let you know how it goes when I am back on the sweet stuff.
