Oatmeal Chocolate Chip Cookies
1 Cup Butter, softened
3/4 Cup Granulated Sugar
3/4 Packed Dark Brown Sugar
2 Large Eggs
1 Teaspoon Vanilla Extract
2 1/2 Cups Quick Cooking Oats
1 1/2 All Purpose Flour
1 3.4 oz. Package Instant Vanilla Pudding
1 Teaspoon Baking Soda
1 Teaspoon Salt
2 Cups Chocolate Chips (Semi-Sweet or Milk Choclate......"Guittard" is my favorite brand)
1 Cup Chopped Pecans
In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the oats, flour, pudding mix, baking soda and salt. Gradually add to creamed mixture and mix well. Stir in chocolate chips and nuts.
Dropped by rounded teaspoonfuls 2 inches apart onto ungreased (I used some Pam) baking sheets. Bake at 325 degrees for 10-15 minutes or until lightly browned. Remove to wire racks.
