I got this out of a Hungry Girl cookbook and I loved it. Anyone who knows me, knows that I don't like veggies, so the shocker here is that it is full of veggies, even broccoli.
Scoopable Chinese Chicken Salad
One 16 oz package of dry broccoli slaw mix
12 oz cooked skinless lean chicken breast chopped
1 cup canned water chestnuts, chopped
1 cup canned mandarin orange segments
1 cup chopped scallions (I used green onions)
¾ cup Newman’s Own Lighten Up! Low Fat Sesame Ginger Dressing
In a large bowl, toss all ingredients together until mixed well. Refrigerate for at least 2 hours. Stir will before seriving.
Serving = 1 ½ cups
