Yeah but Jacob couldn't have gone into her after Rachael's death because her children would have to be older than Joseph and Benjamin, Rachael's children.
 
The very first verse of that Jasher passage you quoted said that after Rachael's death Jacob went into Bihah. But Dan and Naphtali, Jacob's sons through Bihah, are older than Joseph and Benjamin, Jacob's sons through Racheal thus and therefore Jacob had to go in to Bilhah before Rachel died.

Unless the passage is just saying that he moved in with her after Rachel died but had been sleeping with her the whole time.

That’s what I get from it. That Reuben is upset that Jacob prefers a concubine over a wife who happens to be Reuben’s mother.

Several chapters previous, it gives the birth order and mother of each of Jacobs children. Many chapters later it gives you the sons wives names and their children including Benjamin who has two wives

I concur with VV's reading of it. Remember, the mothers were somewhat jealous over Jacob's attention and the children were especially prone to extreme jealousy (i.e. the selling Joseph into slavery incident).
